I know what you’re thinking. Finally a post about all of our favorite topic. FOOD. Trust me I am right there with ya. The thing our lives revolve around from season to season just like our taste in fashion, food is essential to who we are.
This summer I have taken it upon myself to have a much healthier diet, since my summer is packed full with work + school so the gym is not always the first priority these days. To stay in shape (even though I more than occasionally indulge in cheesecake) I have taken to fresh veggies (crazy ik) everyday with every meal. Learning how to cook more and eat out less has 100% changed my diet for the better.
My YUM go-to dinner is chicken with balsamic pasta + veggies.
First start by boiling your pasta, while doing this you can slice your chicken breast in half to make it thinner and a smaller portion for two (or good for lunch tomorrow). Add a little bit of buttah (idc if this is bad for me fake butter is a no thx) then throw in your chicken. Usually I like to season with a little bit of salt + pepper to start. After the chicken starts to lose a little bit of its pinkness on the outside (usually after 3 minutes) I throw in some sliced veggies (my fav currently are green pepper, broccoli, onion, mushroom) then season again with garlic salt and a small splash of extra virgin olive oil. Let brown and smell yummy you’ll know what to do.
Now after the pasta is done, drain and pour into frying pan with chicken + veggies. Add a tablespoon or 2 of my FAVORITE dressing (Kraft Olive Oil Balsamic Vinaigrette), mix and let simmer for about 2 minutes. Then done, I think you can handle it from there.
